Tasty, Healthy OIive Oil Granola

Ingredients:

3 c old-fashioned rolled oats

1 c raw pumpkin seeds, hulled

1 c raw sunflower seeds, hulled

1 c coconut chips or shreds

1 1/4 c raw pecans, coarsely chopped

1/4 c EVOO

1/2 c packed light brown sugar

1 tsp coarse salt, plus more to taste

1/2 tsp cinnamon

Preparation

  1. Preheat oven to 300F

  2. In a big bowl mix everything together till well combined. Spread mixture in an even layers on a cookie sheet. (One with sides works best) Bake, stirring every 10 minutes, until granola is golden and toasty - about 45 minutes.

  3. Remove granola from oven and season with more salt to taste. Let cool. Feel free to improvise after your first batch. Try raisins, dried sour cherries, or add dehydrated mango pieces. Switching up walnuts for the pecans?

    JUST KEEP THE MAPLE SYRUP, OLIVE OIL, AND SALT. Keep in airtight container or divvy up into smaller amounts and food seal.
